Kimchi Miso Soup

Ingredients
  • 6 cups filtered water
  • 8 ounces soba noodles
  • ¾ cup carrots sliced thinly
  • ½ cup onion sliced thinly
  • ¼ cup chickpea miso or other variety
  • 2 cups leafy greens sliced thinly (cabbage, kale, dandelion)
  • ¾ cup Life Foods Aloha Kimchi
  • 2 Tbsp Life Foods Superfood Gomasio

  • 6 cups filtered water
  • 8 ounces soba noodles
  • ¾ cup carrots sliced thinly
  • ½ cup onion sliced thinly
  • ¼ cup chickpea miso or other variety
  • 2 cups leafy greens sliced thinly (cabbage, kale, dandelion)
  • ¾ cup Life Foods Aloha Kimchi
  • 2 Tbsp Life Foods Superfood Gomasio
Instructions
  1. Bring water to boil in a large stockpot. Add noodles, carrots and onions. Reduce heat and cook until noodles are soft, about 8 minutes. Turn heat off but leave pan on burner.
  2. Scoop out ½ cup of noodle water and add to a small bowl. Add miso and stir until dissolved fully. Add miso mixture, greens and kimchi to stockpot and let stand for just about one minute, until greens wilt. Do not boil once miso and kimchi have been added. Taste and adjust seasoning as needed.
  3. Divide noodles into serving bowls and cover with broth. Garnish with Gomasio and enjoy!
Recipe Notes

Miso paste is a traditional Japanese condiment that is made from cultured beans and rice. It has a wealth of nutritional benefits and can benefit digestion and heal upset stomach. Miso is traditionally made with soy, but chickpea miso is also available, which is a delicious, mild miso suitable for those with soy allergies or aversions. Miso Master Organic is a brand that offers totally soy-free chickpea miso.

Soba noodles are Japanese noodles traditionally made with buckwheat flour, which is gluten-free. Eden brand makes a delicate 100% buckwheat noodle that can be found at health food stores. Most other brands combine buckwheat and wheat flour for their soba noodles, so if you are looking for a gluten-free option, be sure to read the labels.

Life Foods Gomasio is a great mix of sea veggies, seeds and just a touch of natural salt. Sea vegetables (seaweed) contain a wealth of ocean minerals and iodine, which the healthy fats in the sesame seeds and hempseeds help round out the flavor. Hawaiian salt give it a salty finish.
