Life Foods Mac & Cheese

There are lots of versions of vegan macaroni and cheese available, but often they rely on fake flavors or weird ingredients. Our Life Foods vegan macaroni and cheese is loaded with nutrition from whole veggies, rich cashews and our wonderful Aloha Kraut, fermented naturally with Maui-grown cabbage, fennel and onion.

Our Life Foods vegan macaroni and cheese is loaded with nutrition from whole veggies, rich cashews and our wonderful Aloha Kraut, fermented naturally with Maui-grown cabbage, fennel and onion.

Ingredients
  • ½ cup chopped sweet potato
  • ½ cup chopped carrot
  • ¼ cup chopped onion
  • 300 grams pasta of choice
  • cups raw cashews soaked one hour
  • 1 cup plant-based milk unsweetened
  • ½ cup Life Foods Aloha Kraut
  • 2 Tbsp nutritional yeast
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp olive oil
  • 1 tsp Life Foods Yellow
  • 1 tsp sea salt
  • ½ tsp black pepper

  • 1 tsp Life Foods Yellow
  • 1 tsp sea salt
  • ½ tsp black pepper
Instructions
  1. Add sweet potato, carrot, and onion to a small saucepan, cover with water, and bring to a boil. Simmer for 10 minutes, or until tender. Drain and set aside.
  2. In a large stockpot, boil 6 cups water and cook pasta according to directions. Drain, rinse in cool water and set aside.
  3. Drain and rinse nuts. Add to food processor and process until crumbly. Add plant-based milk, Life Foods Aloha Kraut, nutritional yeast, lemon juice, olive oil, Life Foods Yellow, salt and pepper. Blend until smooth, then add drained, cooked vegetables and continue blending until very smooth. Add more milk to thin out the sauce if needed.
  4. In a large bowl toss noodles and half the sauce. Stir to coat, and add more sauce if desired. Stir in extra Aloha Kraut for some extra crunch! Garnish with fresh chopped herbs or greens. Serve immediately. Any extra sauce can be saved for up to a week in the refrigerator.
Recipe Notes

Choose your favorite pasta for this recipe; we recommend a rice pasta like penne, elbows or shells. Serve alongside a big salad or some steamed greens for a totally healthful, delicious meal.
