Life Foods Vegan Stuffing Recipe
Who needs a dead bird when there are so many amazing plant-based foods to eat during a Thanksgiving spread? If a delicious vegan stuffing recipe needs to be the centerpiece of the meal, this hearty recipe, featuring the smokey savoriness of our Breakfast Patties and a rich variety of Autumnal ingredients, will be the answer!

  • 1 lb gluten-free or sprouted grain bread cubed
  • 5 Tbsp vegan butter
  • 2 cups diced red onion
  • 1 cup diced celery
  • 1 cup diced carrot
  • 4 Life Foods Breakfast Patties cubed
  • 2 Tbsp fresh sage minced
  • 1 Tbsp fresh rosemary minced
  • salt to taste
  • 1 cup toasted pumpkin seeds
  • 2 cups vegan broth
  • 1/2 cup fresh minced parsley

  • 1 lb gluten-free or sprouted grain bread cubed
  • 5 Tbsp vegan butter
  • 2 cups diced red onion
  • 1 cup diced celery
  • 1 cup diced carrot
  • 4 Life Foods Breakfast Patties cubed
  • 2 Tbsp fresh sage minced
  • 1 Tbsp fresh rosemary minced
  • salt to taste
  • 1 cup toasted pumpkin seeds
  • 2 cups vegan broth
  • 1/2 cup fresh minced parsley
Instructions
  1. Preheat oven to 300º. If using fresh bread, lay slices evenly onto baking sheet and bake until toasty and dry, about 25 minutes. Remove from oven and let cool. Tear or chop into chunks.
  2. Heat 1 Tablespoon vegan butter over medium heat in a large skillet. Sauté onions, celery, carrots and sausages for 5 minutes. Add remaining vegan butter, herbs and broth and cook for 2-3 minutes.
  3. Add broth mixture to bread along with pumpkin seeds. Stir gently. Pour the stuffing in a 9x13 baking dish and sprinkle with fresh parsley.
  4. Cover and bake for 20 minutes at 350 degrees, then uncover and bake for 15 minutes longer.
