Tempeh Satay with Red Peanut Sauce

Tempeh Satay is an Indonesian-inspired recipe that features our great mung bean tempeh and cool, raw vegetables. It’s a great quick meal, especially as our summer weather heats up and it becomes JUST TOO HOT to cook! The tempeh needs just a few minutes in the skillet, and the rest of the recipe comes together easily with some pantry staples and a few key Life Foods ingredients.

Tempeh Satay with Red Peanut Sauce
Tempeh Satay is an Indonesian-inspired recipe that features our great mung bean tempeh and cool, raw vegetables. Ingredients
  • 1 8 ounce package Life Foods Aloha Tempeh slightly thawed
  • 2 Tbsp coconut oil
  • 2 each carrots sliced into sticks
  • 1 each cucumber sliced into sticks
Red Peanut Sauce
  • .25 cup natural peanut butter
  • .25 cup Life Foods Red
  • 3 Tbsp fresh lime juice
  • 2 Tbsp coconut aminos, soy sauce or Bragg's
  • 1 Tbsp Life Foods Banana Thai-chi Hot Sauce
  • 1 Tbsp water more as needed

  • 2 Tbsp coconut oil
  • 2 each carrots sliced into sticks

Red Peanut Sauce
  • .25 cup natural peanut butter
  • .25 cup Life Foods Red
  • 3 Tbsp fresh lime juice
  • 2 Tbsp coconut aminos, soy sauce or Bragg's
  • 1 Tbsp Life Foods Banana Thai-chi Hot Sauce
  • 1 Tbsp water more as needed
Instructions
  1. Slice tempeh evenly into 12 strips. Warm coconut oil in a skillet over medium-high heat. Add tempeh to pan, and cook until browned, about three minutes. Flip and cook until other side is browned too. Remove from pan.
  2. Arrange tempeh on a platter along with carrots, cucumbers and any other vegetables you'd like (steamed green beans, asparagus, pea pods, etc.)
Red Peanut Sauce
  1. Mix together all Sauce ingredients until smooth and creamy, adding a few more Tablespoons water as needed to make a smooth sauce. Serve immediately, or store leftovers in the refrigerator for up to a week.
  2. Enjoy Red Peanut Sauce as a dip with the vegetables and tempeh, or wrap into lettuce or rice paper wrappers for a simple rolls.
