Vegan Caesar Salad with Superfood Croutons
A vegan version of a salad!? Yes, indeed! Traditional Caesar dressing usually contains egg and anchovies, and we don’t need any of that! Try our Vegan Caesar dressing on this salad and everything else in your refrigerator! The Superfood Croutons are optional, but awesome.
Vegan Caesar Dressing
  • .5 cup Life Foods Noni Ranch Dressing
  • 3 tbsp capers
  • 1tbsp apple cider vinegar
  • 1 tbsp fresh lemon juice
  • 1 tbsp Life Foods Yellow
  • 1 small garlic clove
  • 2each Life Foods Superfoods Sliders
  • 1head Romaine lettucewashed and spun dry
  • .5 cup hempseeds
Vegan Caesar Dressing
  1. Add Noni Ranch, capers, vinegar, lemon juice, Yellow and garlic to a food processor or blender.
  2. Blend until creamy and smooth, adding a few teaspoons of water if needed for a thinner texture. Set aside.
  1. Preheat oven or toaster oven to 400ยบ. Line a baking sheet with parchment paper. Add sliders to baking sheet. Add to oven and bake for 15 minutes, until burgers are crispy and very browned.
  2. Remove from oven and let cool slightly. Cut burgers into cubes, and bake for another 10 minutes. Let cool completely.
  3. Slice romaine lettuce thinly and add to a large mixing bowl. Drizzle with half the Vegan Caesar Dressing on lettuce and toss well to combine. Sprinkle on hempseeds and toss again.
  4. Divide salad between four serving plates or bowls. Add burger croutons to top of salad and drizzle with a few tablespoons of reserved dressing. Serve immediately.
  5. Store any remaining dressing in a small jar for up a week.
