Vegan Hawaiian Loco Moco Recipe

Ingredients
  • 2 Life Foods Superfood Veggie Burgers
  • 1 Tbsp olive oil
  • .5 cup chopped onion
  • 3 cloves garlic minced
  • .5 cup finely chopped broccoli
  • .5 cup finely chopped carrot
  • 2 cups cooked brown rice
  • 1 cup finely chopped spinach or kale
Chickpea Gravy
  • .25 cup olive oil
  • 2 cloves garlic minced
  • .5 cup chickpea flour sifted
  • .33 cup nutritional yeast
  • .25 tsp ground black pepper
  • 1.5 cups vegetable broth or water

Chickpea Gravy
  • .25 cup olive oil
  • 2 cloves garlic minced
  • .5 cup chickpea flour sifted
  • .33 cup nutritional yeast
  • .25 tsp ground black pepper
  • 1.5 cups vegetable broth or water

Instructions
  1. Preheat oven or toaster oven to 400º. Line a baking sheet with parchment paper. Add burgers to baking sheet. Place in oven and bake for 15 minutes, then flip the burgers. Bake another 5-10 minutes, until burgers are crispy and very browned. Remove from oven.
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, cooking for 5-8 minutes, until onions are soft and not quite browned. Add broccoli and carrots and toss to coat. Cook 5-8 minutes more until broccoli is cooked through. Add brown rice and stir to combine. Cook just until rice is warmed through, about 5 minutes. Stir in kale and toss to wilt. Remove veggies and rice from pan.
  3. To build the Loco-Mocos, scoop rice and vegetable mixture onto serving plate. Top with Superfoods Burger. Drizzle Chickpea Gravy on top and along edges of rice. Garnish with fresh herbs and serve immediately.
Chickpea Gravy
  1. Wipe pan clean. To make the Chickpea Gravy, warm olive oil over medium heat. Add garlic and cook until just browned.
  2. Reduce heat to low. Sift in chickpea flour, nutritional yeast, and black pepper and stir continuously until mixture thickens into a crumbly paste. Cook for five minutes, stirring continuously, until flour mixture browns slightly and is fragrant- but be careful not to burn.
  3. Very slowly add in broth and whisk continuously until all clumps are blended and gravy is smooth and thick; start by adding just 1 cup of liquid, then add more as needed to make the gravy the perfect texture. Stir for about one minute after it's fully incorporated, then remove from heat.
  4. Chickpea Gravy is best on the first day, although leftovers will keep for a week in an airtight container, although it may lose some thickness after storage.
