Vegan Sausage and Pepper Pasta
A quick and easy dinner that packs a colorful and flavorful punch! Bright green and red peppers pair perfectly with our Spicy Italian Breakfast Patties. This can be served as is with the fragrant garlic oil/butter, or be topped with your favorite marinara or alfredo sauce.

Ingredients
  • 8 ounces brown rice pasta any variety
  • 1 head garlic peeled and roughly chopped
  • .5 cup olive oil or vegan butter
  • 1 cup thinly sliced red onion
  • 2 red bell peppers sliced thinly
  • 1 green bell pepper sliced thinly
  • 4 Life Foods Spicy Italian Breakfast Patties, or Italian Crumble thawed slightly
  • fresh ground black pepper and sea salt

Instructions
  1. Cook pasta according to package directions. Drain, rinse with cool water and set aside.
  2. In a large skillet, warm olive oil or butter over medium-low heat. Add garlic cloves and let cook for 10 minutes, or until browned and fragrant- be careful not to burn. Remove oil and garlic from skillet and set aside.
  3. Increase heat to medium-high and add onion. Cook until onions are soft and browned, about 10 minutes. Add red and green pepper and cook until just crisp-tender, about 5-8 minutes, adding a few Tablespoons of garlic oil if peppers seem dry. Remove onions and peppers from pan.
  4. Crumble breakfast patties into skillet and cook until browned, stirring occasionally. Add onions and peppers back into the skillet and toss to combine.
  5. In a large mixing bowl, toss together pasta, peppers and sausage.
  6. Drizzle with a few Tablespoons of oil and add in as many garlic pieces as you like. Season with fresh black pepper, a sprinkle of sea salt if desired, adding more garlic oil to taste.
  7. Leftover garlic oil can be stored in an airtight jar in the refrigerator for up to a week.
